Lemon Bars! Contributed by my friend

This recipe is from my friend Haley.  It uses Almond Flour!

CRUST:

  • 1 1/2 cups Almond Flour
  • 1/2 teaspoon salt
  • 2 Tablespoons grapeseed oil
  • 1 Tablespoon agave nectar
  • 1 Tablespoon vanilla extract

TOPPING:

  • 1/4 cup grapeseed oil
  • 1/4 cup agave nectar
  • 3 large eggs
  • 1/2 cup freshly squeezed lemon juice

Preheat the oven to 350.

Grease an 8-inch square baking dish with grapeseed oil and dust with flour.

To make crust, combine the flour and salt in a large bowl.  In a medium bowl, whisk together the oil, agave, and vanilla. Stir the wet ingredients into the flour mixture until thoroughly combined. Press the dough into the prepared baking dish. Bake for fifteen to seventeen minutes, until it is a lightly golden color.

While the crust bakes, prepare the topping. In a blender, combine the grapeseed oil, agave nectar, eggs, and lemon juice. Process on high until smooth. Remove the crust from the oven. Pour the topping evenly over the hot crust.

Bake for 15 to 20 minutes, until the topping is golden. Let cool in the baking dish for 30 minutes, then refrigerate for 2 hours to set. Cut in to bars and serve. Enjoy!

    I’ve never been a huge fan of lemon bars, but my husband loves them. I’ll have to try this one!
